How to Make Nasturtium Chips

Nasturtiums are one of my favourite things to grow in the garden. I include it in every garden because it helps bring in pollinators, it can act as a pest trap and the entire plant is edible – the leaves, flowers and seeds! Plus it’s very easy to grow from seed. If you are going to add any flower into your garden, make it nasturtium!

When eaten raw, nasturtium has a light, spicy black pepper flavour to it. When it gets cooked, that flavour disappears, giving a whole new flavour to enjoy.

Nasturtium chips are really simple to make and can be made using any variety of nasturtium, from the jewel mix to the empress of India variety. I have grown a few different varieties in my garden and have found the jewel mix to be the most productive, so I recommend growing this variety if you are looking to eat it regularly.

Let’s get into the recipe for making nasturtium chips and you will see just how easy they are to make!

Ingredients

  • Approx. 20 fresh nasturtium leaves (amount needed depends on the size of the leaves and the baking pan)
  • Olive oil
  • Salt

Instructions to Make Nasturtium Chips

Step 1

Pick around 20 leaves off of the nasturtium plant. Choose leaves that are an average chip size so you don’t have to cut or rip any up. Leave a small piece of the stem on the leaf (approx. 1/2″) so they are easy to grab once cooked.

Step 2

Preheat oven to 375°F and line a baking sheet with parchment paper or a silicone mat.

Step 3

Wash the leaves and pat them dry. If the leaves are wet it will take longer for them to cook or they may not cook correctly.

Step 4

Lay the nasturtium leaves in a single layer, upside down, on the baking sheet. Sprinkle salt and olive oil on all of the leaves, ensure they are all lightly coated.

Step 5

Once the oven has preheated, put the nasturtiums in the oven for 15 minutes or until the leaves are crispy. Be careful not to burn them.

Step 6

Remove from the oven and enjoy! The chips taste best right out of the oven and don’t keep (they will soften again and lose their crunch).

Nasturtium Chip Recipe

Ingredients

  • Approx. 20 fresh nasturtium leaves

  • Olive oil

  • Salt

Directions

  • Line a baking sheet with parchment paper or a silicone mat
  • Set oven to 375° F
  • Clean the leaves and pat them dry (it is important to dry them)
  • Place the leaves upside down on the lined baking sheet
  • Drizzle the leaves with olive oil and salt
  • Place in the oven for 15 minutes or until crispy (crispy texture is important!) Be careful not to burn the leaves. Remove early if necessary.
  • Remove from oven and enjoy!
